Lyburn Gold is ripened for around 8 - 12 weeks. It has a creamy, smooth texture and very small holes, called eye eyes, evenly distributed throughout. It is a washed curd cheese, more continental and closer to a Gouda. Technically it is a hard cheese because it has been pressed, but it is generally described as semi-hard because it still has some movement in it, making it great for melting.
The Lyburn Gold as you can see has consistently won prizes at the British Cheese Awards over the last twenty years.
